Los polisacáridos son polímeros cuyos constituyentes (sus monómeros) son monosacáridos, los cuales se unen repetitivamente mediante enlaces glucosídicos. Estos compuestos llegan a tener un peso molecular muy elevado, que depende del número de residuos o unidades de monosacáridos que participen en su estructura.
