El jugo de repollo solo cambia de color si se calienta por encima de 60 °C.

Las antocianinas del repollo morado cambian de color según el pH de la solución.

El rango de colores del indicador natural va aproximadamente de rojo a verde/amarillo según pH.

El repollo morado no contiene antocianinas.

Con base, el jugo de repollo se tiñe de verde o amarillento.

En soluciones neutras, el color del indicador siempre es azul.

Con ácido, el jugo de repollo suele volverse rojo o rosa intenso.

Se puede usar el jugo de repollo como indicador de pH casero para soluciones comunes.

El indicador no funciona en soluciones acuosas, solo en alcohol.
