First , the beans arrive from Africa , Asia , or America . Workers them . Then , machines the beans . After that , they the roasted beans into small pieces . Machines the shells . We call this winnowing . Now , only the centers of the beans remain ; we call nibs .

Next , big , heavy rollers grind the nibs until they become soft and liquid . We call this liquid " mass " .

Then , a machine presses the mass . This process separates the cocoa powder from the cocoa butter . We use cocoa powder for cooking . At home , we mix the powder with sugar and milk to make drinking chocolate . We mix the cocoa butter with sugar and milk to make white chocolate .

We also mix the mass ( cocoa powder and cocoa butter ) with sugar to make plain chocolate , or with milk and sugar to make milk chocolate .

Finally , you can add other ingredients to the chocolate : nuts , fruit , or mint , and you can make many different shapes and sizes .
