A new technology developed in may help reduce the huge amount of milk wasted around the world each year . At present , about one - sixth of the world's milk , or more than 150 million tonnes , is wasted . The technology , called Cybertongue , was developed by PPB Technology and uses special proteins known as biosensors . These biosensors can quickly and measure the quality of raw milk . In the past , dairy companies had to wait two or three days to receive laboratory test , but with this new technology they can get results in only three minutes at their own facilities . The system measures , an enzyme that can spoil milk products and reduce their shelf life . Long - life or milk is especially sensitive to this enzyme . By identifying milk with high protease levels , companies can use it for products such as or yoghurt , or treat it correctly before processing . The of PPB Technology , Stephen Trowell , believes this technology could prevent more than 70 million tonnes of milk every year . Mr Trowell previously worked at and helped develop technology used for wine testing and explosive detection . Later , he created Cybertongue and its use to the dairy industry . The technology is already being used in many parts of the , including North America , Europe , Africa , Oceania , Central Asia , and India . It can also help companies find where harmful enzymes are entering the supply . In the future , Cybertongue may be used to test food for allergens and bacterial toxins . Mr Trowell believes the technology can improve food , reduce waste , support food security , and provide important benefits for people around the .
