You can hide a formula by ticking the Hidden option on the Protection tab and then locking the worksheet.

To protect sheet, you select Protect Sheet on the Review toolbar.

The Hidden checkbox hides the formula even when the worksheet is unlocked.

By default, when a worksheet is locked, all its cells are locked.

You can protect an individual cell without protecting the surrounding worksheet.

After locking a worksheet, you can freely edit cells marked as Locked.

Unprotecting a sheet changes the locked state of all cells to unlocked automatically.

You must close Excel to apply the workbook protection.

A whole workbook can be protected to prevent adding or removing worksheets.

To unlock specific cells, you unlock the sheet, select the cells, Format Cells, and untick Locked, then lock the sheet again.
